  • Cull on the hook – we process sample birds and choose breeders based on a rubric including the carcass: width, depth, fat cover, and texture.
  • Cull for legs and feet – we look at leg color, best representation of the breed traits & remove deformities
  • Cull for growth and frame – we don't keep narrow birds because they're "nice."
  • Cull for vigor – weak, stunted, or chronic-issue birds don't stay, no matter how "rare" they are.

  • White - Best size of meat and L/XL eggs, a few less dozen eggs per year due to size
  • Black - 1lb less of meat than while. L eggs, more eggs laid per year than white
  • Blue - Smallest frame birds, L eggs, more eggs laid per year than white
    • Black & Blue can breed together, blue are not a self-blue breed
